When midnight snacks become healthy treats.

It's incredibly easy to find yourself perusing the kitchen cupboards late at night after a few drinks with friends, staying up watching tv or as is the case with me, working until the wee hours of night. Your stomach starts to grumble and you desperately need something to fill the void. I always go straight for chips and salsa or toast with butter or even more unhealthy, cookies and ice cream. But there's a way to cut through the hunger, feed your sweet tooth and keep it on a healthier note. While there is still some time left in berry season and before those chilly nights set in, I'm taking full advantage. One of my favorite snacks or desserts is a bowl of fresh berries with a dollop of home made whipped cream. It'll keep those hunger cravings down to a minimum late at night and be far fewer calories than my usual go to's.

Whipped Cream and Berries:

Ingredients (3)
  • 1 cup heavy cream
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon pure vanilla extract​

Instructions
  1. Chill a clean bowl and whisk attachments in the freezer for 10 minutes.
  2. Add all of the ingredients to the bowl and whisk on high speed until medium peaks form, about 1 minute. (Alternatively, you can use a hand whisk and a large chilled bowl. Whisk all of the ingredients until medium peaks form, about 2 to 3 minutes.)

​Wash and cut up berries of your choosing. Serve berries in a bowl and top with home made whipped cream.
